Creamy Paneer Curry with Kruncho Cashews & Almonds

Ingredients

200g paneer, cut into cubes

1/4 cup Cashews

1/4 cup Almonds, blanched

2 tbsp Raisins

2 large onions, roughly chopped

3 large tomatoes, roughly chopped

1 tbsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp red chili powder
-
1 tsp garam masala

1/4 cup fresh cream
-
2 tbsp ghee or oil
- Salt to taste
- Fresh cilantro for garnish
How to Make Creamy Paneer Curry Cashew Almond
Step 1: Prepare Dry Fruits Paste
Soak cashews and blanched almonds in warm water for 20 minutes. Grind them into a smooth and creamy paste. Keep aside.
Step 2: Cook Onion-Tomato Base
Heat ghee or oil in a pan. Sauté chopped onions until translucent.
Add ginger-garlic paste and cook for 1 minute until aromatic.
Add chopped tomatoes and cook until soft and mushy.
Step 3: Blend the Gravy
Let the onion-tomato mixture cool completely. Blend into a smooth puree.
Step 4: Prepare the Curry
Heat remaining ghee in the same pan. Add the onion-tomato puree and cook for 5-7 minutes until oil separates.
Add turmeric powder, red chili powder, and salt. Mix well.

Add the cashew-almond paste and cook for another 5 minutes on low flame, stirring continuously.
Step 6: Add Paneer & Raisins
Add water (about 1 cup) to adjust consistency. Bring to a gentle simmer.
Add paneer cubes and raisins, cook for 2-3 minutes.
Step 7: Final Touch
Stir in fresh cream and garam masala. Turn off the heat.
Garnish with fresh cilantro.
